Birthday Tiramisu + Recipe
My husbands birthday was celebrated with a birthday tiramisu cake.
I asked him two weeks prior what he wanted his birthday cake to be, and he excitedly told me tiramisu.
I was surprised, seeing as we only make tiramisu for Christmas and New year's, but it's easy enough to make so I happily made him a tiramisu cake on this special day.
Anyway, here is a picture of the cake in question with a different background for privacy reasons.

It was loved by everyone, and it's also my mother's favorite kind of dessert. I like it too, but I wouldn't say it's my favorite.
Here's the recipe:
- 8 eggs
- 2 tubs of marscapone cream
- 2 packs of lady fingers (I used organic)
- 1 tbsp vanilla extract
- 1 tsp salt
- add sugar to taste
- cocoa powder for the top
- 1 cup espresso
Instructions:
seperate egg yolks and whites,
whisk the whites in a bowl until peaks are formed, you can temper the egg whites and yolks if you'd like.
while whisking egg whites,
whisk the yolks with sugar and vanilla extract until a light golden color
add marscapone cream little by little until fully incorporated with egg yolk
add vanilla and espresso to taste
once well mixed together, it should be quite creamy, add it to the merengue egg whites
fold the mix it into the egg whites until fully incorporated
prep your dish with a bit of cream at the base, to stop the lady fingers from sliding around, then add the lady fingers all in a row facing the same way so that very little gaps exist. Soak each lady finger in espresso eithrr with a spoon or by gently pouring it equally around. Spoon is better.
Add a layer of the cream and then another layer of lady fingers in a row same direction
add as many layers as you like of cream and lady fingers.
when done, put in the fridge for up to 8 hours but more is better
serve cold and before serving, sift cocoa powder over the top.
